Pumpkin pie
So, this recipe comes straight off the back of the Libby's 100% Pure Pumpkin can. They have the famous recipe and the new fashioned recipe. We stick to the famous, but feel free to try what you will. The big question I have always had is why don't they just sell a can of all this stuff already mixed in together for the pie? Why go through the effort to can the pumpkin without all the other stuff already in it? Couldn't they go to Carnation and the ground clove cartel and just come to some agreement to sell the pie filling pre-mixed? It would save a bit of time.
Ingredients
Preheat the oven to 425 |
Directions
1. Mix dry ingredients in a small bowl. 2. Beat the eggs in a large bowl (or take them out back behind the wood shed). 3. Stir in the pumpkin and the dry ingredients. 4. Gradually stir in the milk. 5. Pour the whole mixture into your pie shell. 6. Bake in the oven at 425 degrees for 15 minutes. Reduce the temperature to 350 degrees and bake for an additional 30-40 minutes. You know it's done when a knife poked in the middle comes out clean. 7. Cool the pie, then serve a thin slice with ample amounts of whip cream. |
Thanksgiving in taiwan
When my dad was serving a mission in Taiwan, we went over there for Thanksgiving to visit him.
For thanksgiving dinner, we went to a traditional Chinese dinner that my dad had arranged. He was very proud of this authentic dinner. Unfortunately, there were a lot of eyeballs, odd looking seafood, and things that were still moving. The kids didn't eat a thing. After dinner, we took the kids to a pizza shop run by a guy from London and had pizza and Nutella pizza for desert. It was divine. The next day was definitely the highlight of the trip. We got to help serve Thanksgiving lunch to the missionaries living there in Taipei. Because I could check bags for free on the flight, we brought over bags filled with stuffing, candy, and other hard to find goodies. The highlight was serving the missionaries pumpkin pie that were purchased at the local Costco. I think we had 50 pies, and they went like wildfire. Whip cream was flying and we could barely keep up serving the pies. It was one of the best Thanksgivings I can remember and the kids had a great time helping with the lunch and serving the missionaries. |
