Sara's wheat bread

Sara's Life Changing Bread
Can bread change your life? Yes, it can. Once we started making this bread, we could never go back to store bought bread. It's just so delicious, easy to make, and wondrous. Bread was always such a mystery to us. We tried bread makers, various recipes, random kneading techniques, you name it, we tried it. Then came this super easy, no fuss recipe and the rest is history. With three kids still at home, we make bread twice a week. Now we just need to make our own honey and we'll be set for life. 
Ingredients
  • 3 cups of hot tap water
  • 1/3 cup canola oil
  • 1/3 cup honey
  • 1 Tbsp salt
  • 2 Tbsp vital Gluten (kitchen specialties)
  • 1 Tbsp Dough Enhancer (also from kitchen specialties)
  • 2 Tbsp SAF instant yeast
  • 7-8 cups freshly milled whole wheat flour (from white wheat)
  • 9 1/4 x 5 1/4 bread pans
Directions
  1. Get out your Bosch 
  2. Add the water, oil, and honey but don't mix it!
  3. Add 4 cups of freshly milled flour and still don't mix it!
  4. Don't mix it, did you get that part yet?
  5. On top of the flour, add the dough enhancer, gluten, and yeast (No salt yet)
  6. Jog in mixture using the M switch (if you don't have the M switch, then mix for 1 minute) so that the flour doesn't rise out of the mixing bowl.
  7. Mix on speed 1 until smooth.
  8. Let stand for about 10 minutes, dough should rise to the spur gear in the middle of the bowl and will be spongey.
  9. Celebrate the sponge!
    1. Sponging allows the wheat bran to absorb the moisture, thus making the dough dryer and improving the texture ... it also gives you an advantage in terms of the flour to water ratio because the dough is dryer, you need less flour, and hence less dense bread.
  10. On speed 1, add the salt and the rest of the flour until it starts pulling away from the bowl. (about 3 and about 1/8 cups for us here in Colorado at 6,800 ft, though sometimes its just 3 cups, but we stop when it stops pulling away from the middle of the bowl). 
    1. Once you have made this a few times, and figured out your flour ratio, you can just add it all at once. 
  11. Set the timer to 8 minutes and mix on speed 2.
  12. Divide into 3 groups and weight it to make sure its about even.
  13. Fold into bread loves.
  14. Spray loaf pans.
  15. Place the dough into the loaf pans and let it rise for about 45 minutes.
  16. Put in cold oven and set to 350 degree and bake for 25 minutes (at least for our oven, you'll have to figure out your own).

Sara's favorite TV show, possibly of all time, is Schitt's Creek.  She has probably watched it all the way through a dozen times. Folding in the cheese is a classic moment, but had they known about this bread recipe, they probably would have had David celebrate the sponge. It would have been epic.  Either way, just try to keep up.

David Rose : OK, well that's because I'm ladling and stirring at the same time and you're just standing there.
Moira Rose : Now's not the time to lose focus, darling.

Moira Rose : Yes, so try to keep up. OK, next. Now's the time to sprinkle in the chili pepper flakes.
David Rose : We've already done that.
Moira Rose : What number are we on?
David Rose : Oh my god, is this not your mother's recipe?
Moira Rose : Yes, and now I'm passing it on to you! So try to keep up. Next step is to fold in the cheese.
David Rose : What does that mean? What does "fold in the cheese" mean?
Moira Rose : You fold it in.
David Rose : I, I understand that, but how, how do you fold it? Do you fold it in half like a piece of paper and drop it in the pot, or what do you do?
Moira Rose : David, I cannot show you everything.
David Rose : OK, well, can you show me one thing?
Moira Rose : You just... here's what you do. You just fold it in.
David Rose : OK, I don't know how to fold broken cheese like that.
Moira Rose : David, then I don't know how to be any clearer! You take that thing that's in your hand and you...
David Rose : If you say "fold in" on more time...
Moira Rose : It says "fold it in"!
David Rose : This is your recipe! You fold in the cheese then!
Moira Rose : Don't you dare!
David Rose : You fold it in!
Moira Rose : David! Oh good, now I see bubbles. David! What does burning smell like?
